“There is one more and new Cava, in this case an ultra-young and with no added sulphites 2015 Bruant, produced with old-vine Pansa Blanca (Xarel-lo) grapes from granitic soils sold without liqueur d'expedition. The nose is quite reticent, with shy notes of white fruit and flowers and hints of dry herbs. The palate is sharp and saline, clean and fresh, and the bubbles are better integrated than you might think. 10,000 bottles produced."

Impeccable year after year. No sulfites. No sugar. No additives. But there is a little bird on the label. And on the menu of El Celler de Can Roca, the restaurant in Girona that dethroned Noma as the best in the world a few years ago. Bruant lent a hand to that. With a finely dry, highly bitter wine. Soft mousse, the zest of white fruit, shy spice, and a hint of salt in the finish. No complaints. Unless it is that the bottle empties so quickly.
